Spicy and Sour Soup

Ingredients

  • Pork 200g
  • Firm Tofu 200g, diced
  • Wood Ear Mushrooms 30g, soaked and sliced
  • Bamboo Shoots 30g, sliced
  • Bean Sprouts 100g
  • Black Fungus 30g, soaked and sliced
  • Eggs 2
  • Vinegar 2 tablespoons
  • Soy Sauce 1 tablespoon
  • White Pepper Powder 1/2 teaspoon
  • Salt As needed
  • Cooking Oil As needed
  • Sichuan Peppercorn 1 teaspoon
  • Dried Chili Flakes 1 teaspoon
  • Green Onion 2 stalks, chopped
  • Coriander A handful, chopped

Steps

  1. In a pot, heat some cooking oil and add Sichuan peppercorn and dried chili flakes. Stir-fry until fragrant.
  2. Add the ground pork and stir-fry until cooked through.
  3. Add bamboo shoots, wood ear mushrooms, black fungus, and tofu. Stir-fry for a few minutes.
  4. Pour in water and bring to a boil. Reduce the heat and simmer for about 10 minutes.
  5. In a bowl, beat the eggs and slowly pour them into the soup while stirring gently.
  6. Add vinegar, soy sauce, white pepper powder, and salt. Stir well.
  7. Add bean sprouts and simmer for another 2 minutes.
  8. Garnish with chopped green onion and coriander.
  9. Serve the hot and spicy sour soup and enjoy.
