Spicy and Sour Soup
Ingredients
- Pork 200g
- Firm Tofu 200g, diced
- Wood Ear Mushrooms 30g, soaked and sliced
- Bamboo Shoots 30g, sliced
- Bean Sprouts 100g
- Black Fungus 30g, soaked and sliced
- Eggs 2
- Vinegar 2 tablespoons
- Soy Sauce 1 tablespoon
- White Pepper Powder 1/2 teaspoon
- Salt As needed
- Cooking Oil As needed
- Sichuan Peppercorn 1 teaspoon
- Dried Chili Flakes 1 teaspoon
- Green Onion 2 stalks, chopped
- Coriander A handful, chopped
Steps
- In a pot, heat some cooking oil and add Sichuan peppercorn and dried chili flakes. Stir-fry until fragrant.
- Add the ground pork and stir-fry until cooked through.
- Add bamboo shoots, wood ear mushrooms, black fungus, and tofu. Stir-fry for a few minutes.
- Pour in water and bring to a boil. Reduce the heat and simmer for about 10 minutes.
- In a bowl, beat the eggs and slowly pour them into the soup while stirring gently.
- Add vinegar, soy sauce, white pepper powder, and salt. Stir well.
- Add bean sprouts and simmer for another 2 minutes.
- Garnish with chopped green onion and coriander.
- Serve the hot and spicy sour soup and enjoy.
