Tomato and Egg Stir-fry

Ingredients

  • Eggs 3
  • Tomatoes 2 (about 300g)
  • Scallions as needed
  • Cooking Oil as needed
  • Salt as needed
  • Sugar as needed
  • Soy Sauce as needed
  • Cilantro as needed

Steps

  1. Cut the tomatoes into small pieces and set aside.
  2. Beat the eggs, add a pinch of salt, and mix well.
  3. Heat a wok or pan with some cooking oil, pour in the beaten eggs, and fry until both sides are golden brown.
  4. Cut the cooked eggs into small pieces and set aside.
  5. In the same wok or pan, add some cooking oil and stir-fry the scallions until fragrant.
  6. Add the chopped tomatoes and stir-fry until well combined.
  7. Season with salt, sugar, and soy sauce. Continue stir-frying to evenly distribute the seasoning.
  8. Add the cooked egg pieces and stir-fry to combine.
  9. Stir-fry until the tomatoes are cooked through, then turn off the heat.
  10. Garnish with cilantro and serve.
