Tomato and Egg Stir-fry
Ingredients
- Eggs 3
- Tomatoes 2 (about 300g)
- Scallions as needed
- Cooking Oil as needed
- Salt as needed
- Sugar as needed
- Soy Sauce as needed
- Cilantro as needed
Steps
- Cut the tomatoes into small pieces and set aside.
- Beat the eggs, add a pinch of salt, and mix well.
- Heat a wok or pan with some cooking oil, pour in the beaten eggs, and fry until both sides are golden brown.
- Cut the cooked eggs into small pieces and set aside.
- In the same wok or pan, add some cooking oil and stir-fry the scallions until fragrant.
- Add the chopped tomatoes and stir-fry until well combined.
- Season with salt, sugar, and soy sauce. Continue stir-frying to evenly distribute the seasoning.
- Add the cooked egg pieces and stir-fry to combine.
- Stir-fry until the tomatoes are cooked through, then turn off the heat.
- Garnish with cilantro and serve.
