Twice-Cooked Pork
Ingredients
- Pork belly 300 grams
- Leek 1 stalk
- Garlic cloves 3
- Ginger 1 tablespoon
- Doubanjiang 2 tablespoons
- Chili bean paste 1 tablespoon
- Cooking oil as needed
- Soy sauce 1 tablespoon
- Sugar 1 teaspoon
- Salt to taste
- Scallions 2
Steps
- Blanch the pork belly slices in boiling water for a few minutes to remove impurities. Drain and set aside.
- Heat a wok or pan with some cooking oil. Add the pork belly slices and stir-fry until they turn slightly crispy. Remove from the wok and set aside.
- In the same wok, add a little more oil if needed. Add minced garlic, ginger, doubanjiang, and chili bean paste. Stir-fry until fragrant.
- Add the leek pieces and continue stir-frying for a few minutes.
- Return the cooked pork belly slices to the wok. Stir-fry everything together.
- Add soy sauce, sugar, and salt. Mix well to coat the pork and vegetables.
- Continue stir-frying until everything is heated through and well combined.
- Transfer the twice-cooked pork to a serving plate. Garnish with chopped scallions.
- Serve hot with steamed rice or as a side dish.
