Twice-Cooked Pork

Ingredients

  • Pork belly 300 grams
  • Leek 1 stalk
  • Garlic cloves 3
  • Ginger 1 tablespoon
  • Doubanjiang 2 tablespoons
  • Chili bean paste 1 tablespoon
  • Cooking oil as needed
  • Soy sauce 1 tablespoon
  • Sugar 1 teaspoon
  • Salt to taste
  • Scallions 2

Steps

  1. Blanch the pork belly slices in boiling water for a few minutes to remove impurities. Drain and set aside.
  2. Heat a wok or pan with some cooking oil. Add the pork belly slices and stir-fry until they turn slightly crispy. Remove from the wok and set aside.
  3. In the same wok, add a little more oil if needed. Add minced garlic, ginger, doubanjiang, and chili bean paste. Stir-fry until fragrant.
  4. Add the leek pieces and continue stir-frying for a few minutes.
  5. Return the cooked pork belly slices to the wok. Stir-fry everything together.
  6. Add soy sauce, sugar, and salt. Mix well to coat the pork and vegetables.
  7. Continue stir-frying until everything is heated through and well combined.
  8. Transfer the twice-cooked pork to a serving plate. Garnish with chopped scallions.
  9. Serve hot with steamed rice or as a side dish.
